I can prepare this loaf in less than 10 mins, I prepare the dry ingredients and the pan whilst the yeast is working, I make it a bit more spicy and add mixed peel for Christmas. I slice it thickly, and I have it toasted every morning. Yum!
Spicey Fruit Bread
(Dairy Free)
300ml Rice or Almond Milk (can use normal milk)
2T canola oil
Put in a glass jug in micowave for 1 min on high, Should be about 37C
ADD:
2t Granulated dry Yeast, + 1t white sugar
stir gently, let get frothy
Mix together:
1 ½ C Flour
1 ½ C Wholemeal flour (Or 1C plain + ½ C bran works)
2T Brown sugar
1t Salt
2t Cinnamon
1t Mixed spice
Mix together well.
Add:
Handful of sultanas
2T sunflower seeds
2T Pumpkin Seeds
1 t Linseed seeds
Add the liquid to the dry ingredients, mix into stiff dough, turn out on floured board, knead gently and lovingly for 2 mins. Fill the bowl up with COLD water to soak whilst kneading.
Wash your hands and the the bowl , then rinse with HOT water to get the bowl warm.
Spray lightly, return the dough ball, leave in warm place covered in glad wrap intil it rises (1-2 hours)
Turn out, give a light knead whilst making it into a sausage shape, then put into a sprayed loaf tin, wait til it rises again, (1-2 hours) then cook to feels just firm in the middle for 35mins.
